Fried Pineapple Upside-down

Occasionally it can be fun having kids.
While walking the kids home from school we decided to do a pineapple upside down birthday cake. It's just about the simplest cake in the world, but still ... one should always, in these fast times, check the internet for definitive information, just in case... something. Selena did, and came up with a fun variation... fry the cake.

Our big cast iron pan was perfect. After boiling the pineapple rings in the topping (basically butter and brown sugar), you carefully add the batter. After letting it fry for a bit, it is transferred to the oven to do that baking thing which cakes enjoy so much. Here's what it looks like when it's done... and then flipped upside down:



(Another internet suggestion was to add cardamom to the batter -- did so, sounds great, but didn't really notice it. Next time, more?)
